Healthy Falafel Wraps | Mummahood

Makes 4 lunches

 

Ingredients

400g chickpeas (from a tin)

1 lemon, zested

1 teaspoon All Spice

1 tablespoon spelt all-purpose flour (plain flour is also fine)

½ a bunch of fresh coriander, chopped

1 tablespoon of coconut oil

4 Wholewheat tortilla wraps

Natural, fat free yoghurt

 

 

For the salsa

100g cherry tomatoes, quartered

1 fresh chilli, deseeded and chopped

½ clove of garlic, chopped

1 lime, juiced

Method

 

  1. Drain the beans and blitz them until smooth with a few chunks, in the food processor
  2. Add in the lemon zest, the seasoning, the spices, the harissa, the flour and the stalks from the fresh coriander
  3. Blitz it all together
  4. Create 8 patties from the mixture
  5. Heat up the oil in a frying pan, and, when hot, add in the patties and fry on both sides until they turn golden
  6. Whilst the patties are frying, make the salsa by combining the tomatoes, chilli and garlic in the food processor and blitzing together, leave some lumps for texture
  7. Stir in the coriandere, and lime juice and season well
  8. Heat up the tortillas and the add a falafel, some salsa and yoghurt and fold together
  9. Serve with some roasted peppers
