When we’re pregnant (and when we’re not!) we often feel like having something sweet and indulgent. And these yummy and gooey brownies are a guilt-free way to do just that. Bursting with the health benefits of coconut, the antioxidant-powerhouse which is raw cacao, the natural sweetness of dates and all the vitamins, proteins and minerals of eggs – this delicious treat is good for both you and your baby.
With a prep-time of 5 minutes you can whip these up and be enjoying them within 30 mins!
- 1 cup Medjool dates, pitted
- 1 cup coconut flour
- 1/4 cup honey
- 1/4 cup extra-virgin coconut oil, melted
- 1 tsp. pure vanilla essence
- 1/2 cup cacao powder
- 1/2 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/4 tsp. sea salt
- 3 eggs
Preheat oven to 180 degrees.
Pour all the ingredients, other than the eggs, into a food processor or blender and pulse for a minute until a smooth dough has formed
Then add one egg at a time and pulse to combine
Line a loaf tin with parchment paper and pour the contents in
Flatten the dough and add the toppings
Put into the oven for 20 mins
