Chewy almond and goji berry breakfast bars | Mummahood

We’re often on the go and Ava is a big snacker (like her mumma!) so I wanted to find an alternative to the Goodies Bars that I was spending a fortune on and so came up with these yummy, gooey and healthy breakfast bars.

Quick and easy to make, a perfect recipe for little hands to help with because the exact amounts of the nuts and seeds don’t really matter that much!

INGREDIENTS

1 cup almond butter

1 cup milk

1/2 cup maple syrup (If you like it less sweet, reduce this to 1/3 cup))

1 teaspoon vanilla essence

2 1/2 cups porridge oats

I/2 cup quinoa pops

1/2 cup coconut flakes

1/2cup almond flakes

3 tablespoons flaxseeds

3 tablespoons pumpkin seeds

3 tablespoons goji berries

 

METHOD

Preheat the oven to 160c

Mix the milk, almond butter, maple syrup and vanilla together in a large bowl.

Fold in all the rest of the ingredients with a big wooden spoon

Line an 8*8 inch pan with baking parchment and add the mixture

 

Press down the mixture evenly and cook for 15 mins

Allow to cool and Cut into bars
